Several of these kitchens work closely with neighboring Israel Defense Force bases that donate fresh surplus food to supplement the dishes prepared in the local United Soup Kitchen commissary.
New diners are encouraged to come to the soup kitchens. No questions are asked unless the visitor becomes a 'regular', at which time a social worker helps the guest fill out an evaluation form to determine eligibility on a going-forward basis.
Many of the diners are aged Holocaust survivors who come as much out of their need of a warm smile and simple human contact, as they do for the delicious food.
